hmmm... one magical animal
I have the distinct pleasure of consuming of the best pork that I've taste in recent years... all thanks to my GF's father, who raises his own locker pork. This time, we finally got to taste the bacon and ham. The bacon cut is lean with just the right amount of fat (any more fat, and I would have to schedule for an angioplasty!). It is smoked and no preservatives were added. I think the lack of preservative makes it extra yummy, and less salty. Besides eating the bacon plain, I've added to rice, and am looking up more recipes to use the smoked meat.
Can't wait to try the ham...
